Tasting Note
Brilliant and deep ruby red, the nose has a large bouquet
and variegated with red fruits, leather, balsamic herbs and dark spices. On the palate it is dry and potent, with great structure and elegance and an extremely long finish.
Serving Suggetions
It is also a great wine for roasts, especially lamb and red meats
an excellent meditation wine.
Origin
4 hectares in the commune of Barile, in the hamlet of Gelosia. 50 year-old vines (Paternoster’s historical and ampelographic heritage) lying at 600 meters above sea level; very low yields (3,500-4000 kg per hectare).
Grapes
Aglianico del Vulture 100%
Vinification and Maturation
Classic red wine vinification with destemmed grapes; maceration on the skins in stainless steel for 12-15 days at 25°-28°C, with periodic pumping over and punching down of the cap. Maturation for 12 months in large Slavonian oak casks for 80% of the wine and in (not new) French barriques for the remaining 20% for 14 months. 7-8 months’ bottle-aging.
