Very strict grape selection and careful vinification using the traditional method of re-fermenting on the pomace from the Amarone create this complex and mellow wine. We were so proud of our first “Ripasso” made with a selection of our best grapes, that we became the first family to flaunt the name on a label.
The sale of this product is forbidden for individuals under the age of 18, in accordance with decree law No. 14/2017.
Tasting Note
A deep ruby red in color, on the nose it offers intense scents of ripe cherries and plums, which give way to lightly floral and ethereal aromas. On the palate it is full-bodied and well-structured. The soft tannins enhance the richness of the fruit, which is nicely balanced by the tangy and persistent finish.
Serving Suggetions
Excellent with white and red meat dishes, or mature cheeses. With its well-balanced, rounded style, it can also accompany more delicate game dishes.
Origin
From the Tommasi family’s own vineyards in the hilly zone of Valpolicella.
Grapes
Corvina Veronese, Rondinella Molinara.
Vinification and Maturation
Fermentation in stainless steel vats for around 12 days. Re-fermentation on the grape pomace from the Amarone for about 8 days, with pumping over daily. Maturation for 12 months in 65 hl Slavonian oak casks.
